Piss who??? Have you ever watched the movie "Waiting"? with Dane Cook.
Well, before jumping into any conclusion. This isn't not a warning or it will unlikely happen in a good restaurant where chef's name or reputation at stake. I thank god that I have never seen or experienced that in any restaurants, hotels or kitchens I have worked or have been working. If I ever see that, I will just quit it because it is not the kind of place I want to work for or own.
Tonight, I watched a clip from MSNBC about a man found several body hairs stuffed inside his steak. It happened at Texas Road House which happen to be my favorite place to go for their sweet dinner roll, free all you can eat boiled peanut, and my favorite baked sweet potatoes. That's all I like about the place.
This guy ordered steak. It was over cooked, too well done. So he sent it back. But manager suggested him to bring the recooked order home. I still don't understand why the manager suggested the take home. Why not let the man ate his reordered steak. He went home, opened the box and started to eat til almost half way. Then he found hairs, not one, not two but a bunch stuffed inside. So he filed complaint at Police Station. After police requestioned, the cook admitted that he commited to the crime but claimed it was facial hair. Ok, facial hair and body hairs are different, dude!!
So the man sued Texas Roadhouse and never ate steak for a long long time. I don't blame him.
In my own experience, I have seen cooks or chefs reacted angrily or cursed when a dish was sent back. And the cooks continued to bitch and curse about having to recook it. Most of the time when it happened at busy busy time. But no one ever did such a thing like that because we all take pride of what we do (cooking). I have seen young cooks with "I know everything" or "I am better than this" attitude got fired. Nobody is gonna put up with that kind of nasty action. But I have seen many times that customers had no idea what they talked about. Most case, they complained about steak not cook to proper temperator. Most case happen with someone ordering steak rare and complain that steak is not hot!! Of course, rare isn't gonna be piping hot inside. It will be too done. When I worked at Lumiere, we all used $100 meat thermometer to check the doneness. No complaint ever!
The question is.... Are you sure it will never happen to you one day?? So my suggestion to you is
1. Choose place where chef's standard is high because his fame and name can't afford that to happen. If it does, they will be out of business due to public embarassment.
2. I personally never ever piss servers, bartenders, or kitchen staffs off wherever I eat out. I don't care if it is 5 stars or no star. I won't risk it.
3. I personally treat the others the way I want to be treated. And I have worked in every position in the restaurant before. It is a hard job, folk. To have to deal with one bitchy customer, your night can be hell.
Like my mom said " When people cook at home, they are slaves of their own. When they eat out, they want to make you their slave". And that's true. You ever see anyone eating their mom's food or their spouse's cooking and bitch abou it? Hardly, huh.
Be patient and reasonable when going to eat out. Trust me, nobody want to screw your order or give you bad service. If service is terrible, wait til the end to complain. That's my best advice from a man who see both ends as customer and behind the stove.
So don't ever (expletive) with your servers or kitchen staffs........ :)
Revised on June 13, 2008. I just read a post on one of my favorite blogger, Cathy of Noblepig.com, about her story with people she no longer be friend with because she could no longer tolerate their behavior and several shameful incidents in restaurants when dining out together and their selfishness and annoyance. It is unreal to see these people coming to any restaurants I cooked or worked. Just unreal.

Amen to that!
By the way, I just finished Anthony Bourdain's Kitchen Confidential. Think you should write the Thai version of that. ;-D
I may consider it one day but restaurant has to come first. I do think about launching a magazine with family and friend. Will you be one of a writing contributor?
I like Kitchen Confidential as well. Check out Heat by Bill Buford or Marco Pierre White book
